Whipped Ricotta
The lightness and freshness of the ricotta and lemon allow the olive oil to shine through and really be the star.
Ingredients (makes about 2 cups):
- 1/4 cup cream cheese, softened
- 2 cups whole-milk ricotta
- 2 tablespoons whole milk
- sea salt, black pepper, lemon zest & El-Sayed Estate EVOO!
- toasted bread for serving
Instructions:
Using a whisk, beat cream cheese until smooth. Add the ricotta and milk, and mix at medium until fluffy.
Move mixture to your serving bowl, sprinkle with salt, black pepper, and lemon zest to taste. Drizzle with olive oil! For the bread, paint slices with olive oil and toast.

A collection of our favorite vinaigrettes to elevate your greens.
Salad Dressings
Citrus Vinaigrette
- Juice of 1 orange & half a lemon plus zest from both
- 1 Tbsp shallots, 1 tsp chopped thyme leaves
- 1 tsp Dijon mustard, 1 tsp honey
- 1/4 to 1/3 cup El-Sayed Estate EVOO (Olio Nuovo to boot!)
Whisk all ingredients together. Toss with salad and enjoy!
Classic Vinaigrette
- 3 Tbsp red wine vinegar
- 1/2 cup El-Sayed Estate EVOO
- Salt and pepper to taste
Combine all ingredients - whisk, shake, stir, fold, beat, blend, mix - the choice is yours.
Asian Ginger
- 1/2 cup soy sauce, 3 Tbsp rice vinegar, 2 Tbsp white vinegar, 1/4 cup water
- 3 Tbsp honey, 3 cloves minced garlic, 2 Tbsp fresh minced ginger
- 3/4 cup El-Sayed Estate EVOO
Whisk everything together or shake in a closed container.
Mandarin Orange Sesame
- 1/3 cup orange marmalade, 2 Tbsp honey
- 1/4 cup white vinegar, 2 Tbsp soy sauce, 3 Tbsp sesame oil
- 1/4 tsp each: cayenne pepper, ground ginger, garlic powder
- 1/4 cup chopped mandarin oranges
- 2/3 cup El-Sayed Estate EVOO
Blend all ingredients except the oranges. Stir in chopped oranges. Pour over greens.
